This blend of 90% Geisenheim (a German hybrid of Riesling and Chancellor once grown exclusively in Quebec and Nova Scotia, but now grown in Ontario where it occasionally makes unattributed appearances in blends) and 10% Gamay is produced using the oldest of the sparkling-wine methods: pétillant naturel. Unlike the traditional method of Champagne, in which a dry wine undergoes a second fermentation in bottle, this wine is bottled while still fermenting. It's elegant and floral, with blackberry, apricot, raspberry, lemon and honey.
