The book begins with profiles and stories from chefs in both eastern and western Canada who have all donated their time and talents to this cause. Contributors from the west include Vikram Vij, Ned Bell, Dale McKay, Connie DeSousa and John Jackson, Roy Oh, James Walt, Stefan Hartmann, Angus An, Andrea Carlson, Jackie Kai Ellis and Warren Barr. From the east are Michael Smith, Jason Bangerter, Victor Barry, Roger Mooking, Rob Gentile, Patrice Demers, Antonio Park, Chris Aerni, Jeremy Charles.
